Staci Style Fiesta Stuffed Peppers

Ingredients:

6 red or green peppers

2 bags of Brown Success Rice (or other brand, equivalent amounts)

2 cups of fresh salsa

1/2 cup fresh corn

2 tsp cayenne pepper

1 1/2 cups of refried beans (If you don’t care about organic ingredients, you can even use Tostitos bean and cheese dip)

2  cups  monterey jack cheese  OR cheddar cheese

1 tsp garlic powder

1. Preheat your oven to 360 degrees.

2. Follow the instructions on your bag/box of rice and cook while preparing the peppers.

3. Remove and discard the tops, seeds and membranes of the peppers. Rinse peppers. Place all peppers upright in a casserole dish or roasting dish (It really depends on how large the peppers are. I prefer to have a tight fit inside the dish).

4. Once rice is cooked, mix all ingredients except cheese in a bowl with the rice. Then add 1 cup of cheese to mixture and stir. Place bean mixture inside of peppers. Fill peppers to the top.

5. Cover the peppers with foil and bake covered for 15 minutes.

6. Remove foil from pan. Take the remaining cheese and sprinkle some on top of each pepper.

7. Place the dish back in oven and bake uncovered for an additional 10 minutes (or until peppers are tender)

**Sometimes, I like to add a dollop of sour cream and a bit of cilantro to the top when I serve them.

Staci Style Spicy Veggie Soup

  • 1 15oz can organic tomato sauce                                           2 tbsp black pepper
  • 2 15 oz cans of organic diced tomatoes                                  2 potatoes, diced
  • 1 bag of frozen organic mixed veggies                                   1 packet of onion mushroom soup mix
  • 2 tbsp of Riunite Lambrusco wine                                           4 cups of water
  • 2 tbsp Tabasco sauce                                                             2 carrots, chopped
  • 2 celery ribs, chopped                                                            1 medium onion, diced or minced
  • 1 tbsp minced garlic                                                                1 tsp basil
  • 1 bay leaf                                                                                1/4 tsp Sea Salt

In a soup pot, pour 1/2 cup water and sauté the carrots, onion and celery for 10 minutes. 2 1/2 cups of water to pot and packet of onion mushroom soup mix. Simmer for 5 minutes. Add diced tomatoes and tomato sauce. Simmer for 10 minutes. Add all remaining ingredients (including the rest of the water). Simmer for 1 hour (or more, depending on what you want to do)

**NOTE:  I like a strong, spicy tomato broth. If you want less tomatoes, only use one can of diced tomatoes. Adjust water according to how strong of a tomato flavor you want. I’ve also added 1 beef bouillon cube as well. For those of who who like meat, feel free to add ground beef/beef tips to the soup as well. If you do this, brown the meat and onions separately and add them before you simmer for 1 hour.

Teriyaki Salmon

Serves 4 (Unless you eat two fillets a piece…which we did…lol. Our fillets were very small)

4 Salmon fillets (fresh or frozen)
1/4 cup teriyaki sauce
1/4 tsp black pepper
1 1/2 tsp of coconut oil or olive oil
1 clove garlic
1 dash of fresh lemon juice
2 tsp mince onion
2 tsp minced green pepper/red pepper
1 dash Tabasco
1/8 tsp Mrs. Dash Extra Spicy
1/2 tsp of light brown sugar

Put the fillets in a ziploc bag. Mix all ingredients except brown sugar and pour mixture into bag. Marinate for 2-6 hours, depending on your preference. Once marinated, put fish in a shallow, lightly greased baking dish. Sprinkle brown sugar over the tops of the fish.

Cover with foil. Bake at 350 degrees for 25-30 minutes or until fish flakes.
