Ingredients:
6 red or green peppers
2 bags of Brown Success Rice (or other brand, equivalent amounts)
2 cups of fresh salsa
1/2 cup fresh corn
2 tsp cayenne pepper
1 1/2 cups of refried beans (If you don’t care about organic ingredients, you can even use Tostitos bean and cheese dip)
2 cups monterey jack cheese OR cheddar cheese
1 tsp garlic powder
1. Preheat your oven to 360 degrees.
2. Follow the instructions on your bag/box of rice and cook while preparing the peppers.
3. Remove and discard the tops, seeds and membranes of the peppers. Rinse peppers. Place all peppers upright in a casserole dish or roasting dish (It really depends on how large the peppers are. I prefer to have a tight fit inside the dish).
4. Once rice is cooked, mix all ingredients except cheese in a bowl with the rice. Then add 1 cup of cheese to mixture and stir. Place bean mixture inside of peppers. Fill peppers to the top.
5. Cover the peppers with foil and bake covered for 15 minutes.
6. Remove foil from pan. Take the remaining cheese and sprinkle some on top of each pepper.
7. Place the dish back in oven and bake uncovered for an additional 10 minutes (or until peppers are tender)
**Sometimes, I like to add a dollop of sour cream and a bit of cilantro to the top when I serve them.
